Risotto rice cake
4 tbspn o oil
1 onion finely chopped
3 cl garlic
1 cup risotto rice
2.5 cup chicken stock
1 cup ricotta
1/2cup cream
1 cup chopped blanched spinach
2 tablespoons fresh basil
1 cup grated cheddar
.5 cup Parmesan
6 eggs lightly beaten
S & p
Sweat onion garlic and o oil. Add rice and toast until brown. Add stock. Being to boil. Stir and cover and simmer for 15 mins. Cool. Add remaining ingredients to cold risotto. Add s & p. Pour into 22cm spring form tin. 1.25 hours 180oc. Or muffin tins.

1/4 cup balsamic vinegar
1/4 cup parsley leaves lightly packed
3 cl garlic
1/4 cup olive oil
2 tsp sugar
1 tsp salt
1/2 tsp b pepper
Soak tomatoes o/nite in balsamic to soften. Process parsley & garlic. Add remaining ingredients. Process until smoothish. Adjust seasoning.

250 gm cream cheese
90gm blue vein cheese

Combine
2.5 cups HG flour or 1 cup wholemeal + 1.5 HG white
Pinch salt
1tsp BS
1.5 cup sugar (muscovado)
1/2 cup coconut long shredded
1tsp mixed spice
Combine
1 x 227g crushed pineapple
2 mashed banana
1 cup oil - 1/2 coconut, olive
3 eggs
1/2 cup chopped dates
Mix everything together. Bake approx 1hr mod oven (180). Ice with cream cheese icing. 6oz cream cheese beat until smooth. Add 1/3 cup icing sugar. 2 tsp lemon juice.
